About the Suribachi

Article on Suribachi (Japanese Mortar and Pestle)

History and Origins

The suribachi, a traditional Japanese mortar and pestle, has its origins in the Heian period (794-1185). It evolved from earlier Chinese grinding tools and became widespread during the Kamakura period (1185-1333). Traditionally made from earthenware with an unglazed interior and grooved sides, the suribachi has been an essential kitchen tool in Japan for centuries.

Cultural Background

The suribachi holds significant cultural value in Japanese cuisine. It symbolizes the meticulous preparation of ingredients and the importance of texture in Japanese cooking. The grooves inside the bowl are specifically designed to grind and crush ingredients efficiently, reflecting the Japanese emphasis on precision and functionality in their culinary tools.

Overseas Reception

In recent years, the suribachi has gained international recognition among chefs and culinary enthusiasts for its efficiency and unique design. Its ability to enhance the flavors and textures of ingredients has made it a valued tool in global kitchens. The suribachi is particularly appreciated for its role in preparing authentic Japanese dishes.

Modern Uses

Today, the suribachi is used in various culinary applications:

  • Grinding Spices: Ideal for grinding seeds, nuts, and spices to release their full flavor.
  • Making Pastes: Essential for creating traditional Japanese pastes such as sesame paste and miso.
  • Preparing Dressings: Used to mix and emulsify dressings and sauces.
  • Crushing Ingredients: Effective for crushing garlic, ginger, and herbs.

Detailed Techniques

Using a suribachi involves several steps:

  1. Preparation: Place the ingredients in the bowl.
  2. Grinding: Use the surikogi (wooden pestle) to crush and grind the ingredients against the grooved surface.
  3. Consistency: Continue grinding until the desired texture is achieved, whether fine or coarse.
  4. Cleaning: Clean the suribachi gently with water and a soft brush, avoiding soap to preserve its surface.

Decided to buy this after I saw a Japanese YouTuber use it to grind sesame for bento. It works great. Though, it's only easy to clean if you get a small bamboo brush made for cleaning it. Otherwise, it might erode the delicate grooves. It's not too large; just right for storage and also easy to use.

Lovely grater that's great for sesame and bento

My original from my teens in Japan broke a few years back and would just use electric spice grinder but this duo is so much better. It does not heat up the spices and grinds beautifully.

Excellent bowl

I needed a mortar and pestle that would crush garlic and ginger with ease and I didn’t want something heavy so I decided on this Japan style and the story of the wavy grooves keeping the spices at the bottom was why I chose this particular one. It is easy to even hold the bowl in one hand and I found it quite easy to just gently pound and rub this way, that way, and the other way to quickly make a paste of the garlic and ginger. I am really pleased I treated myself and after I have used it I have simply rinsed it. Also apparently dishwasher safe so I will probably do that too but of course I won’t put the wooden pestle in the dishwasher.

It has a great story
